Pre-heat oven to 400 F.
Pour a small amount of water over and around the roast. Cook the pork loin for 10 minutes. This will help to keep the juices inside.
Next, lower your oven temperature to 350 F and continue to cook for about 20 mins per pound.
Roast until internal temperature is between 145-160°F, 20- 25 minutes per pound. It will be moist and slightly pink in the center. If you prefer your pork fully white and well done, then go with the 160°F temperature.
